healthy baked oatmeal

I love baked oatmeal! Super easy to whip up and tastes delish. I keep trying out new recipes. This one is a keeper for sure! Can’t wait to try it again and add in some other mix-in’s.

3 cups rolled oats
2 eggs (beaten)
1/4 cup oil (I used coconut oil)
1 cup vanilla-flavored soymilk (I used regular organic whole milk, no soymilk in this house, yuck!)
1/4 cup brown sugar
1/2 cup applesauce (or 1 mashed banana) (my applesauce was unsweetened but had cinnamon and nutmeg in it)
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon vanilla extract (I increased to 2 tsp)

Mix together oil, sugar and eggs.
Add rest of the ingredients and thoroughly mix together.
Bake at 350 degrees for 25 minutes in a greased glass 9 x 12 pan (I used an 8×8 pan and had to cook a little longer, maybe 30 – 35 mins)
Serve warm and it is delicious topped with milk and bananas or with yogurt, berries, and other fruit.
