I just love the eco friendly baby/family facebook page and website. so many great ideas and HONEST information on products, etc! here is a recipe they posted. I had initially bought hemp seeds to try making hemp milk (recipe also from here!) but haven’t gotten around to it yet. So these get made instead. Matteo was obsessed with these and probably ate 3/4 of them himself. They were a little crumbly so next time I may increase the peanut butter a bit to see if it glues them together more.

◦1 cup peanut butter (or alternate nut butter)
◦8-10 pitted dates
◦1/2 cup unsweetened flaked coconut (I used sweetened b/c it is all I had, though I usually have both)
◦1-2 tablespoons cocoa powder
◦1/2 cup shelled hempseed
◦1/2 cup rolled oats
1.In a food processor, pulse together peanut butter, dates, coconut, and cocoa powder until dates are blended in.
2.Transfer mixture to a bowl and stir in hempseed and oats until well combined and the mixture resembles a thick cookie dough. If needed, add more peanut butter or hempseed/oats.
3.Scoop out by the tablespoon and roll into balls. Place on waxed paper and store in the fridge until ready to eat. I roll 1/2 of the balls in coconut for a bit of variety, makes nice presentation too!
