homemade limoncello

I decided to make Chris homemade limoncello for Christmas! I scoured the internet and pinterest for ideas and recipes. Most either called for 100 proof vodka or everclear. Most that used vodka said everclear was too strong and that was why vodkas was a better choice. I wet with 100 proof vodka. Then the amount of lemons per batch varied anywhere from 6 to 12 lemons. it is important to use organic lemons since you are just using the peel/zest. I used 11 lemons! You wash the lemons very well making sure to remove any dirt or residue. Then I used a vegetable peeler to carefully peel strips of lemon peel. Most recipes mentioned doing it this way, though some said to actually make a fine zest. You have to be careful to just get the yellow peel part and not the white coating under it called pith, because that is very bitter! Next you put the lemon peels in a jar and pour in your 750 ml bottle of 100 proof vodka. Then comes the waiting!! Some recipes called for as little as 4 days of waiting. Others said to wait weeks! My plan was 3 – 4 weeks. However it went much much longer than that. I made it Dec 22nd and I think finally went ahead with the next step mid March. Again the recipes all then call for straining the lemon out of the vodka and mixing it with a simple syrup of water and sugar. The amounts again were all over the map! Some said less sugar was better some said more was better! In the end I went with 3 cups of water to 2 cups of organic sugar and made the simple syrup. then let it cool and poured it in a large bottle with the lemon infused vodka. It tastes pretty good! One recipe mentioned saving all the juice from all the peeled lemons, which I did! I squeezed them all over a strainer and froze them in ice cube trays. Those lemon cubes made the BEST lemonade!
