crockpot: Indian butter chicken

we loooove Indian food over here. Seriously could eat it every day! so I am always looking to make my own. This recipe was super easy and tasted delicious!

Crockpot Indian Butter Chicken
found at Taylor Made who Adapted it from Meal Planning 101. my notes in italics
Ingredients
For 4-5 servings
-4-6 boneless, skinless chicken thighs, cut into pieces (I used 1lb)
-1/2 onion, diced
-4-5 cloves garlic, minced
-2 tbsp butter
-2 tbsp olive oil
-1 tsp cinnamon
-1 tbsp curry powder
-1 tbsp garam masala
-2 tbsp Indian curry paste (I used hot curry paste so I halved the amount of cayenne I used, we LOVE spicy food and this was the perfect amount)
-1 tsp salt
-1 tsp cayenne pepper (*leave this out if you don’t like spicy). (I used 1/2 tsp)
-1 can coconut milk
-1 cup plain greek yogurt (or regular)
-1 6 oz can tomato paste
Directions
-Heat the butter and olive oil in a pan over medium heat. Add onion, cook for 3-4 minutes. Add garlic, cook for 30 seconds. Add chicken, cook until it starts to get some color and the onion is translucent, about 3-4 more minutes.
-Pour into crockpot. Add remainder of ingredients. Stir gently. Cook for 7-8 hours on low. Serve by itself, or over basmati rice with a side of whole what naan.
