portobello pizzas

I had pinned a yummy looking recipe for portobello pizzas on pinterest BUT the link didn’t work!

I did a google search and so many recipes came up. They were quite conflicting though on length of cooking and temperature for the oven. Of course there were also varieties of sauce and toppings, etc. I went with a can of Trader Joe’s Tomato Sauce. It would be good with chopped up tomatoes or fresh tomato sauce or even a pesto like some recipes suggested.

I cooked the empty mushroom caps (stems removed) top side down at 375 for 5 minutes. Then topped them with sauce, shredded mozzarella, chopped roasted red peppers (from a jar) and caramelized onions. then baked for another 18 – 20 mins at 375.

they came out really tasty and I will definitely be making them again with various sauces and toppings!
