crockpot: Pumpkin Pie Steel Cut Oats

not gonna lie. I have become slightly obsessed with making steel cut oats in my crockpot. it all started with the recipe for crockpot banana and coconut milk steel cut oatmeal that I found on pinterest and have now made a million times! once I added a can of pumpkin to it but the banana overpowered it. so needless to say I was overjoyed when I ran across this pumpkin pie steel cut oats recipe on pinterest!

Pumpkin Pie Steel Cut Oats in the Crockpot from food doodles

Serves 6-8

  • 2 cups steel cut oats
  • 1 – 15oz can of pumpkin (or about 1 3/4 cup)
  • 1 – 400 mL or 14 oz can full fat coconut milk plus enough water to make 7 cups (about 5 1/4 cups water) (I used a can of light coconut milk which was 13.5 oz but kept the water added the same)
  • 1 tbsp vanilla
  • 1 tbsp + 1 tsp pumpkin pie spice
  • 1/2 cup honey or maple syrup (or leave unsweetened and add after it’s been cooked) (I used maple syrup from a local farm)

Put all ingredients in your crockpot.  Mix well and set to cook for 5-6 hours on low.  Serve hot with milk or a dollop of greek yogurt, extra honey or maple syrup and a sprinkle of cinnamon.

If you have leftovers, they keep well in the fridge but can also be frozen in small portions to take out when needed for a quick breakfast
