csa eats! Chocolate Chip Carrot Sunrise Muffins

these came out great! I made a few changes. The carrots are basically undetectable in the muffins, but I wouldn’t have minded some more carrot taste.

Chocolate Chip Carrot Sunrise Muffins from cupcake punk

1 1/2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1 tsp powdered ginger
1/4 cup sugar
1 cup soy milk (I used regular milk)
1/4 cup vegetable oil (I used 1/4 c applesauce instead)
2 tsp vanilla extract
2 cups grated carrot (I used the super tiny holes on the box grater)
1 cup chocolate chips (I used semi sweet chips)

Preheat the oven to 400 degrees. Line a muffin tin with papers.

In a large mixing bowl, mix the carrots, oil, soy milk, vanilla, and sugar. Add the flour, spices, baking powder, baking soda and chocolate chips. Mix well.

Pour into the muffin papers and bake for 20 minutes until a knife inserted into the center comes out clean.
