roast on baking sheet at 400 for approx 25 minutes. stirring a few times during.
meanwhile cook approx 2 cups israeli couscous
saute thinly sliced onion in olive oil until browned, add some minced garlic and brown.
stir all together. add some salt/pepper and a swig of red wine vinegar. stir well. tastes good hot, warm or cold!
