I had one medium orangish tomato and 3 saladette tomatoes. 2 patty pan squashes and 1 tiny summer squash.
cut everything up into bite sized pieces. mixed in bowl with olive oil, some minced garlic and a chopped onion.
roasted on baking sheet at 400 for 25 minutes.
mixed with some fusilli pasta. maybe 3/4 of a pound. really yummy! the roasting really brought out the flavor of the veggies!
