I used this recipe for roasted root vegetables with apple juice as a guide but didn’t really follow because I didn’t have white wine, nor did I feel like boiling the liquid for that long. instead I just threw everything together, topped with some apple cider and baked. much easier.
apple cider roasted veggies
4 parsnips, peeled and cut into rounds
1 large sweet potato cut into cubes
1 potato cut into cubes
4 very large carrots cut into half moons
preheat oven to 425.
place veggies in large roasting pan
pour apple cider over it, enough so bottom is covered but not so much that it is actually covering the veggies.
add a few pats of butter.
roast about 40 minutes, stirring every 10 minutes.
