CSA eats! cucumber, dill and romaine starring in Middle Easternish Salad

Posted on

I call this Middle Easternish because really it’s not anything like a real salad from a Middle Eastern restaurant, rather it’s just the best I can do!!!

I made Tzatziki with the cucumber and dill
mix together –
one large container of greek yogurt
2/3 of a cucumber shredded (reserve the rest in slices for salad)
2 cloves of garlic minced (from the orleans farmers market!)
chopped fresh dill
salt and pepper to taste
viola!

I broiled some chicken tenders, tossed with a little olive oil, oregano, basil and garlic powder. broiled on high about 4 – 5 minutes per side.

chop half a head of romaine lettuce and mix with reserved cucumber slices and half of a chopped red onion.

tried to serve it all with feta in a lavash as a roll up. But our lavash was broken down the middle. So we ate it as a salad on top of a small piece of lavash. still yummy!!!! I forgot to take a picture
