Pasta with Eggplant, Zucchini and Garlic

another great buy at the Orleans Farmers Market was a gorgeous eggplant, two beautiful zucchini and a perfect bulb of european “hardy” garlic. Sauteed these up with some olive oil and tossed with pasta and parmigiano reggiano cheese. We had also bought some delicious pepperoni cheese bread at the market, but managed to eat all of it for breakfast and lunch!!!
