CSA eats! strawberries with homemade whipped cream

Posted on

the CSA strawberries are AMAZING!!! so sweet and juicy. Decided to make some homemade whipped cream to dip them in.

googled and found a lot of recipes. all of them were basically the same. all called for heavy whipping cream and either granulated sugar or confectioners sugar. I went with the confectioners. I was lucky enough to find a small container of heavy whipping cream, 1/2 pint and just used it all. doubling the recipe below. I decided to follow the measurements listed in a Giada De Laurentiis recipe, cause I love her. It turned out to be a tiny bit too sugary, so next time I would decrease the sugar a bit. Also I had read on other recipes to put the metal bowl and whisk in the freezer for a bit before using. I just love any occasion that calls for taking out my kitchen aid mixer!!!!!! but boy is that thing heavy to lift.

Whipped Cream:
1/2 cup whipping cream (used 1 cup)
2 tablespoons powdered sugar (used 3)
1 teaspoon pure vanilla extract (used 2)

In a large mixing bowl, beat the cream until thick. Add the powdered sugar and vanilla. Continue to beat until cream holds soft peaks.
