We are trying even harder than ever to buy and eat local and organic!
On today’s trip to whole foods we got some local organic Italian parsley, that looked to beautiful to pass up at the store. Huge bunch, only $1.69. decided to make some pesto with it. added some pasta and scallops, but the parsley was the star!!!!
saute in olive oil, about 6 minutes per side, over medium heat
Mix in a food processor: parsley, handful of pine nuts, handful of grated cheese, some minced garlic and stream in organic olive oil until desired consistency. toss with hot pasta.
