so tonight I realized that when its time to “scoop” out the inside of the zucchini, it would be way better to use the zester and create zucchini noodles a la Cara! also this helped me discover that it is way better to cut the zucchini in half to make zucchini noodles, rather than what I had been doing which was just keeping it whole. way easier this way, and the noodles come out better! for tonight’s zucchini boats this is what I did…….
preheat oven to 350
2 zucchini sliced lengthwise
make noodles with the inside, leave enough to hold boat together
squeeze excess water out of noodles and set aside
place zucchini cut side down in a sprayed pyrex
bake for 15 minutes
meanwhile saute chopped garlic, 3 turkey sausages, crumbled and removed from casings, plus the zucchini noodles.
once cooked add salt, pepper, italian seasonings, onion powder, garlic powder, basil and oregano.
drain excess water/fat
stir in marinara sauce, enough to coat
stir in grated cheese
flip zucchini and stuff zucchini boats with mixture.
top with sauce and shredded mozzarella cheese
bake for 20 minutes
let sit for 5 – 10 minutes
