zest of 2 lemons
juice of 2 lemons
1 pound orzo pasta, cooked al dente, drained
12 ounces feta cheese, crumbled
1 large yellow pepper, finely diced
1 large red pepper, finely diced
I jar pitted kalamata olives left whole
small container of grape tomatoes
approx 5 oz (half a bag) of fresh spinach (baby spinach works best)
1 red onion, finely diced
cook orzo, drain and run under cold water. put in bowl and lightly toss with olive oil to prevent sticking. place in fridge to cool while you hop up all your other ingredients.
add the peppers and onion to the orzo and mix.
add the lemon zest and mix.
add the spinach.
drizzle lemon juice on spinach and then mix. the spinach will shrink and wilt while you mix it in to the orzo. if you have big leaves of spinach tear them with your spoon while mixing.
add the olives and a small amount of the olive juice.
add the feta and mix
add tomato’s and mix gently
you can really add anything you want to this and change it up!!!
