this was really good! simple to make and a nice alternative to the egg/breadcrumb routine.
Oven-Fried Honey Chicken by Brooke
should be called oven-fried honey balsamic chicken 🙂
1/4 cup honey
2 tablespoons balsamic or red wine vinegar (I used balsamic)
1 1/2 cups dried bread crumbs (didn’t measure – good with panko too)
1 tablespoon extra virgin olive oil (used cooking spray for pan instead)
6 (4 to 6-ounce) fresh boneless, skinless chicken breasts, halves (I cut up a few breasts into tenders)
Preheat oven to 375°F. (I’ve been doing this recipe at 400, way better and crispier!) In bowl, stir together honey and vinegar. Put bread crumbs into separate bowl. Line baking pan with aluminum foil and spray with cooking spray/oil. Roll chicken pieces in honey mixture, then in bread crumbs; place on foil on pan. Bake for 30 minutes, or until cooked thoroughly. I flipped them half way thru cooking, which I think is really necessary!
here is a pic the time I made it with lemon herb panko from whole foods. it was extra yummy with these nicely flavored breadcrumbs. I find any kind of panko works best on these!!!
