the other WW pastitso

I made tonight the other weight watchers pastitso recipe I have. this one if from the weight watchers new complete cookbook. it is quite different from the other weight watchers pastitso from the takeout tonight cookbook. This one uses ziti, instead of spaghetti, this one uses less meat and adds spinach, this one uses feta instead of grated Parmesan, this one uses 2 eggs and 2 egg whites instead of 3 eggs, this one uses a much smaller pan 2 qt instead of 11×7….the differences are endless!!!

they both taste good though, so who cares!


Pastitso – weight watchers new complete cookbook
serves 6

1/2 lb lean ground beef
2 medium onions, chopped
one 10 oz box frozen spinach, thawed and squeezed dry
one 14 1/2 oz can diced tomatoes
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
freshly ground pepper, to taste
1 1/2 cups cooked ziti
one 12 oz can evaporated skimmed milk
2 eggs
2 egg whites
1/3 cup crumbled feta cheese

1. preheat oven to 350; spray a 2 qt casserole dish with nonstick cooking spray.
2. spray a large nonstick skillet with nonstick cooking spray;heat. saute the beef and onions, breaking apart the beef with a wooden spoon, until the beef is cooked through and the onions soft, 5-8 minutes. stir in the spinach, tomatoes, nutmeg, cinnamon and pepper; heat through. stir in the ziti; transfer to the baking dish.
3. in a medium saucepan, heat the milk to just below a boil. whisk in the eggs and egg whites until frothy. pour over the beef mixture; sprinkle with the cheese and more of the pepper. bake until golden brown, about 45 minutes.
