Pasta with Turkey Sausage, Roasted Peppers and Spinach

Posted on

Chris made this recipe up in his bachelor days. I bet he learned it from his mom. I’ve adapted it over the years and changed a few things. this serves alot of people! so cut it in half if you want…..I always have leftovers

Pasta with Turkey Sausage, Roasted Peppers and Spinach

-About 1 lb of turkey sausage (I like to use hot, or just use regular sausage if you don’t care about the fat)
-1 package of frozen spinach I think it is 10oz
-1 small jar of pastene roasted peppers
-1 can of fat free low sodium chicken broth
-1 lb of pasta, I like to use gemelli or something similar

you kinda have to do all this stuff at once
1. open the spinach, place on dish, microwave for about 7 – 10 minutes.
2. cook the pasta
3. remove the sausage casings and crumbled into a skillet. brown and drain.
4. add the cooked spinach and the roasted peppers (I drain the peppers a little)
5. add just enough chicken broth so it is moist and simmer
6. toss with the pasta
